WHY IS THIS COFFEE SPECIAL

Since our first visit to the Las Lajas cooperative in 2015, our ties and exchanges with local producers have continued to strengthen. This privileged relationship allows us, year after year, to discover and roast increasingly interesting specialty coffees of remarkable quality.

At an altitude of over 1,300 meters, the Chacón Solano family has been cultivating coffee for over 80 years and three generations. Now managed by Oscar and Francisca Chacón, the farm began its transition to organic farming about thirty years ago. In 2000, it became one of the few farms in Costa Rica to obtain official organic certification.

This new lot comes directly from their family farm and was harvested this year. It’s a way for us to continue a relationship that has now lasted over ten years, and to help you discover the full expertise of Las Lajas one harvest at a time.

PROFILE

The Chacón family are also pioneers in Costa Rica in the use of the honey process, a method that helps create coffees with a distinctive and complex aromatic profile.

On the nose, this coffee offers fruity aromas of brown sugar and plum. On the palate, you'll find flavors of black tea, grape, and blackberry. The gentle acidity and jammy notes make this coffee round in the mouth, with a fresh finish reminiscent of grapefruit.
