Profile
In January 2025, during our initial trip to Nicaragua, we met several producers, forged genuine connections, and, most importantly, took the time to understand their reality. We particularly connected with Manfred Günkel, general manager of Sajonia Estate, a mill that encompasses several farms located in the highlands of Matagalpa.
Today, this relationship is bearing fruit (literally). We are proud to present Nicaragua San Antonio, from Finca San Antonio, one of the farms of Sajonia Estate.
We roasted it to a medium (semi-dark) level, which reveals a perfectly balanced profile with lovely notes of toasted nuts and brown sugar. We loved it so much that it earned a place in some of our signature blends, including Giorno Dolce and Alta Forte .
Our journeys to the source are an integral part of our DNA. They allow us to see coffee differently, beyond the bean, beyond the cup. Understanding the work, the challenges, and the passion behind each harvest helps us make better decisions here, roast with greater precision… and tell the full story of what you drink.
