The truth about Cold Brew
True : Cold brew is just as delicious as hot brewed coffee. Even more so, since such a long brewing process is completely overshadowed by the fact that it's cold brewed. Because the coffee's cellulose isn't altered by the heat of the water and the bean, it retains and fully expresses its diverse flavors. While this technique requires patience, it also allows you to keep your brew fresh for up to five days in the refrigerator.
True : Cold brew eliminates all forms of acid, such as that found in normally filtered coffee: more than 65% of the acidity is removed. The pH is also much more balanced (a pH of 6.1 versus 5.48 (7 = neutral pH) in coffee filtered through a percolator). To give you some context, a solution with a pH below 7 is considered acidic, while above this number, the liquid is considered alkaline.
